Rustic Sourdough
Rustic Sourdough is a traditional sourdough loaf with a chewy crumb, hearty crust, and rich flavor developed through long, slow fermentation. Made with simple organic ingredients and naturally leavened with our Alaska sourdough starter, each loaf is given the time it needs to develop character, texture, and depth of flavor.
The dough is slowly fermented and cold-proofed overnight, a traditional process that many people find easier on digestion while also creating the distinct flavor and texture sourdough is known for.
Our Variations
Every Rustic loaf starts with the same foundation: organic flour, fresh water from right here in Alaska’s Copper Valley, Redmond Real Salt, and our 125+ year old Alaskan sourdough starter. From there, each variation is built with carefully selected inclusions and seasonings.
Rustic Everything Seasoned
A savory twist on our Rustic Sourdough. Organic "everything seasoning" is folded into the dough and baked onto the crust, delivering flavor in every bite with sesame seeds, poppy seeds, garlic, onion, and sea salt.
Rustic Jalapeño Cheddar
Sharp cheddar cheese and jalapeños are folded throughout our Rustic Sourdough. The richness of cheddar balances the gentle heat of jalapeños for a bold loaf with plenty of character in every slice.
Rustic Loaded
Our most flavor-packed Rustic loaf. Sharp cheddar cheese, jalapeños, and everything seasoning are folded throughout the dough, with an extra layer of seasoning baked onto the crust. Savory, cheesy, and just a little spicy, this loaf delivers bold flavor in every slice.
Like all handcrafted sourdough, no two loaves are exactly alike. Variations in shape, color, crumb, and flavor are a natural part of working with wild yeast, changing temperatures, seasonal conditions, and small-batch baking.
